In a separate bowl, whisk together the flour, baking soda, salt, cinnamon and nutmeg. Gradually add these dry ingredients to the mango mixture, beating just enough to combine. If you are using walnuts, add them now and stir to evenly distribute them in the batter.

Pour the dough into a greased and floured loaf pan. Bake in the preheated oven for about 60 to 70 minutes, or until a toothpick inserted in the center of the bread comes out clean. Let the bread cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack.

Tips:

This recipe makes one large loaf or two small ones. If you choose to make two small loaves, adjust the baking time to around 45-55 minutes.

For an extra touch, you can add a lemon frosting to the bread. Just combine 1 cup of icing sugar with 2 to 3 tablespoons of lemon juice and beat until smooth. Pour the frosting over the bread after it has cooled.

Mango bread is best served at room temperature and can be stored in an airtight container for up to a week. It also freezes well, so you can make an extra batch to have on hand whenever you want a taste of the tropics.
