Lemon Bread Recipe

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar

Preparation Method:

In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the lemon zest.
In a separate bowl, mix the lemon juice and milk. In another bowl, mix the salt, baking soda, baking powder and flour. Add flour mixture and milk mixture to butter mixture, alternating between the two, starting and ending with flour mixture. Mix just until ingredients are combined.
Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center of the bread comes out clean. Let the bread cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
While the bread is cooling, prepare the lemon topping. In a small bowl, mix the icing sugar and lemon juice until smooth and pour over the cold bread.
This lemon bread is best served the same day, but can be stored in an airtight container at room temperature for up to 3 days. If you want to keep the bread longer, you can freeze it for up to 3 months. Just wrap it tightly in aluminum foil and place it in a freezer bag. When ready to eat, allow to thaw at room temperature.
