Lemon Bread Recipe

If you are looking for a bread recipe that is different, delicious and refreshing, then you will love this lemon bread recipe. He's perfect for breakfast, afternoon snack or even to serve as dessert. So let's get started!

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 2 large lemons
  • 1/2 cup fresh lemon juice
  • 1 cup of whole milk
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon baking powder
  • 2 cups of wheat flour
  • 1 cup icing sugar for the lemon glaze
  • 2 tbsp lemon juice for the lemon glaze

Preparation Method:

Preheat the oven to 180°C and grease a 23x13cm loaf tin with butter and flour, or with non-stick cooking spray.

In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the lemon zest.

In a separate bowl, mix the lemon juice and milk. In another bowl, mix the salt, baking soda, baking powder and flour. Add flour mixture and milk mixture to butter mixture, alternating between the two, starting and ending with flour mixture. Mix just until ingredients are combined.

Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center of the bread comes out clean. Let the bread cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.

While the bread is cooling, prepare the lemon topping. In a small bowl, mix the icing sugar and lemon juice until smooth and pour over the cold bread.

This lemon bread is best served the same day, but can be stored in an airtight container at room temperature for up to 3 days. If you want to keep the bread longer, you can freeze it for up to 3 months. Just wrap it tightly in aluminum foil and place it in a freezer bag. When ready to eat, allow to thaw at room temperature.

Tips:

For maximum lemon flavor, use fresh lemons in this recipe. Bottled lemon juice and dried lemon zest don't taste the same fresh, vibrant flavor.

If you want to add a little more sweetness to your lemon bread, you can sprinkle some icing sugar on top after the lemon frosting has set.

This lemon bread recipe is so delicious, you'll want to make it again and again. With its refreshing citrus flavor and soft, moist texture, it's the perfect bread for any occasion. Enjoy!
